He is Canadian Slow Food pioneer.
As a chef, his passion is promoting seasonal food that is locally grown.

Chef Andrew’s culinary career began in his hometown of Toronto, Canada. After completing his culinary education at George Brown College Andrew worked in such prestigious restaurants as Auberge du Pommier and La Bodega Restaurant.
Andrew’s passion for seasonal and local ingredients motivated him to relocate to the Niagara region where he developed his knowledge of food and wine pairing as Sous Chef at the award winning Peller Estates Winery Restaurant in Niagara-on-the-Lake under Executive Chef Jason Parsons.
From designing the menu to designing La Piazza's decor,everything Mark does is with meticulous detail which isespecially characteristic of his culinary creations.

While in Niagara, Andrew has shared his knowledge and experience as an instructor at the Niagara-on-the-Lake Culinary Institute as well as participated in local events such as the Niagara Wine Auction and the Cuvee Wine Awards.
In 2008 Andrew traveled to Chicago in order to promote Canadian icewine and demonstrate the diversity of Canadian cuisine.
Andrew’s commitment to regional cuisine has led him to The Edgewater Manor Restaurant in Stoney Creek, Ontario. While maintaining a relationship with the local growers Andrew also believes in the quality of unique and rare ingredients from all over the world which has resulted in his innovative dishes and seasonal menu design. Chef Andrew also offers tasting menus that showcase his talent and passion.
